Chicken Schnitzel

Our chicken schnitzel is a flattened chicken fillet in a breadcrumb coating, which means it cooks quickly and evenly. It is made with free-range chicken. Shallow-fry it in a little oil for about four minutes on each side until golden, or bake it in a hot oven for 20 to 25 minutes. Serve it with a squeeze of lemon, potato salad and a green vegetable.
