Pork belly slices are a handy portion size, with layers of tender meat and fat. Ours are free-range, from within a 20-mile radius. Roast them in a hot oven for around 40 minutes until crisp and golden, or bake them slowly under foil and finish them in a hot pan. They are good with Chinese five-spice, or glazed with honey and soy and served with rice and greens.
