Lamb Steaks

Lamb steaks cook in minutes, which makes them handy for a midweek supper. Ours come from free-range lamb, mostly sourced from local farmers we know and trust. Season them, then fry or grill for three to four minutes each side, leaving them slightly pink in the middle if you like, and rest them before serving. A sprinkle of cumin and coriander seed goes well, with couscous or roasted vegetables on the side.
