Venison Haunch

The haunch is the leg of the deer, a large, lean joint for a special roast. Our venison haunch is local wild game from Alton. Because venison is lean, keep an eye on it: roast it hot and quick to serve it pink, or slow-cook it with red wine and juniper until tender. Rest it well, then slice it thinly and serve with roast vegetables and redcurrant jelly.
